What is your favorite Christmas recipe?

    My favorite Christmas recipe is Fruit Salad.

    6 Apples
    6 Bananas
    2 Lg Cans Fruit Cocktail
    1 Lg Pack of Pecans
    1/2 Cup Of Sugar
    1/2 Cup of Mayo

    Mix all together, and Enjoy!!!!

    That sounds delish! It also sounds healthy, which is something I never manage to achieve at Christmas. I have so far made my Christmas cake (which is currently maturing and being fed brandy - I'll have to ice it soon!) and I also made gingerbread men the other day.

    Here's the recipe (from BBC Good Food) - I'm a big fan of ginger so went for a more gingery recipe:

    140g unsalted butter
    100g dark muscovado sugar
    3 tbsp golden syrup
    350g plain flour
    1 tsp bicarbonate of soda
    2 tsp ground ginger and 1 tsp ground cinnamon
    pinch of cayenne pepper (optional)
    2 balls stem ginger from a jar, chopped

    TO DECORATE
    50g icing sugar
    a few glacé cherries (we used undyed)
    2 balls stem ginger

    1. Heat oven to 200C/180C fan/gas 6. Line 2 baking sheets with baking parchment. Melt butter, sugar and syrup in a pan. Mix flour, soda, spices and a pinch of salt in a bowl. Stir in the butter mix and chopped ginger to make a stiff-ish dough.
    2. Wait until cool enough to handle, then roll out dough to about 5mm thick. Stamp out gingerbread men, re-rolling and pressing the trimmings back together and rolling again. Lift onto baking sheets. Bake for 12 mins until golden. Cool 10 mins on the sheets, then lift onto cooling racks.
    3. To decorate, mix icing sugar with a few drops of water until thick and smooth. Halve then slice cherries thinly to make smiles, and cut ginger into small squares. Spoon icing into a food bag, snip off the tiniest bit from one corner, then squeeze eyes and buttons, and a tiny smile onto 1 man at a time. Stick on a cherry smile and ginger buttons. Repeat; leave to set. Will keep up to 1 week in an airtight tin.

    I also like fruit salad for Christmas and it was so common food for such celebration.
    I would also want to have fried chicken (easy to do one) and lumpia.

    Lumpia recipe:
    Lumpia Recipe Ingredients (Filling)
    * 1/4 kg ground pork
    * 1/8 kg shrimp, chopped
    * 1/4 cup finely chopped carrot
    * 1/4 cup of finely chopped celery
    * 1/4 cup of finely chopped parsley
    * 1 garlic clove, minced
    * 1 egg, slightly beaten
    * 3 tablespoons chopped white onions
    * 1 tablespoon soy sauce
    * 1 teaspoon sugar
    * 1/2 teaspoon salt
    * 1 pinch pepper
    Lumpia Recipe Sauce Ingredients (Sweet and Sour)
    * 1 teaspoon cornstarch
    * 2/3 cup water
    * 1/4 cup sugar
    * 1/4 cup apple cider vinegar
    * 2 tablespoons fish sauce
    Lumpia Recipe Cooking Instructions
    * Combine all ingredients for lumpia (spring roll) filling.
    * Wrap in lumpia wrapper in long thin shape (approx 1 table spoon per sheet of wrapper).
    * Deep fry in hot oil until golden brown.
    * Drain excess oil.
    * Cut into shorter lengths before serving.
    * Prepare Sweet and Sour Sauce:.
    * Combine all ingredients in a sauce pan, whisk until sugar and corn starch are dissolved, boil over high heat and reduce to preferred thickness.
    * Serve with lumpia.

    Mine would be Buko (Coconut) Fruit Salad. It’s what my mother prepares during Christmas and New Year instead of ice cream.

    (The following is taken from filipinocooking.net)

    Buko salad is a variation which is closely related to fruit salad. It is the most famous fruit salad in the Philippines. Buko means coconut which is common in tropical countries.This recipe is extremely popular among Filipinos on Christmas and New Year's Eve.

    Ingredients:
    • 4 or more Buko (Young coconut meat)
    • 1 big can fruit cocktail
    • 1/2 cup nata de coco
    • 1 can condensed milk
    • 2 all purpose cream or whipped cream
    • sugar to taste
    adding of fruit is optional you may use the following:
    • 2 Apples
    • 1 small can pineapple chunks
    • 5 banana
    • 1 melon
    • 2 oranges
    • 1/2 kilo seedless grape
    • 3 large ripe mangoes
    How to prepare:
    • Grate the buko (coconut meat) into 3 inches long.
    • Peel and diced the apples. Put in a container with water to maintain the freshness and color.
    • Peel and diced the bananas.Put in a container with water to maintain freshness and color.
    • Peel and diced the melon.
    • Peel and diced the oranges.
    • Peel gently the mangoes and cut into strips. Avoid adding the seed.
    • Rinse and drain the grapes.
    • In one large bowl, combine nata de coco, and toss all the fruit gently. Add condensed milk and whipping cream. If you are using fruit cocktail. Drain some of the juice off so the cream won't be watery.
    • Add sugar if necessary. Keep refrigerated.
